Olea began with a simple idea — that a long table, good olive oil, and honest cooking can hold a room together. Founders Marisa and Theo brought the rhythm of the Mediterranean coast to the foothills and never let go of it.

We cook seasonally and source close, letting Alberta's growers and the day's catch shape a menu that never sits still. Bread is baked each morning, wine is poured with intent, and everything on the plate has somewhere it came from.
